Flash Cooking’s Where It’s At

14 April 2010 by Jean Johnson

Flash cooking is the heart of my kitchen scene. It nets me plenty of fresh seasonal vegetables in short order–warm salad style. I’ve talked about it many times here on the blog, but people resonate with the idea so, that we did a video. It’s a 6 minute clip from chopping the onion to chowing down. There’s also a section devoted to it in Hippie Kitchen: 43-45. Think stir fry without the oil, Asian vegetables, or Asian flavors.

  2. Great knife skills, Jean! Love the video–I’ve watched it twice! I have black-eyed peas soaking as I type.

  3. Another question, Jean, regarding the cast iron wok. Any tips on buying one? I have been looking at them, and they are pricey! Thanks!

  4. You fun, Pam–esp since I have no knife skills at all. Know I ain’t purty in the kitchen, but I do get the grub out.

I just went out to the camping supply store and bought what they had. Even needed to heat the paraffin off as I recall. Then I didn’t use it for a year because it was so heavy. Not until I figured out I could scoop from it instead of pick it up did I begin loving it and giving it a permanent spot on the stove.

On the peas, I hadn’t made any in a long time but they were fun. A nice change from my usual pintos and garbs and limas.
