Thai Slaw Rolls

When you put these on the table people think they’re getting burritos. Then they take a bite and roll their eyes. That’s right, soft rolled up pancakes filled with a Thai-inspired slaw is first rate–something I’d make in a heartbeat if Mark Bittman swooped in for a nib.

  7. What are the delightful little ( Vietnamese ? )

    rolls – they are wrapped in something transparent

    and not boiled in oil. Would like to make them

    but have been unable to even find a place serving

    them since first trying them. They are served

    cold and are wonderful on a hot, muggy day.

  8. Right, Mimi–it’s rice paper wrappers and they’re called Vietnamese Salad Rolls–my gripe with them, though, is that they are filled with white flour noodles and iceberg lettuce…
