Caramelized Cheese Steals the Show in Stuffed Dates

I’ve been out and about at natural food markets doing book signings–and offering samples from Beyond Measure. The last few days I’ve been on a roll with my stuffed dates recipe. You can’t get a more innocent and easier holiday treat than stuffed dates.

Stuffed Dates

Pit the dates and fill with some good room temperature cheese. Then top with a pecan or sliver of jalapeno pepper.

~While I often pick a cheese from the family of blues, lately I’ve been on a roll with caramelized cheese from Norway. Gjetost (YET-ost), it’s called–and people are loving it. Really they are, and there’s a reason for that. The stuff is creamy and rich and unctuous when served at room temperature–one of the undiscovered lovelies of the cheese world.

~I can’t think of more festive and healthy offering. A nugget of caramelized cheese nestled into a Medjool date and decorated with what-have-you.

  3. As Kitchen Mage now knows, I did take stuffed dates and sundry treats to the beautifully restored Redman Hall in Skamakawa, Washington yesterday. The community of people there were so very welcoming, and I shared a book signing table with Kitchen Mage.

    In real life, KM is Beth Sheresh who is the author of Picture Yourself Cooking with Your Kids (2009). This book has a zillion color photos and flew off the shelf as doting grandparents stopped to get freshly minted, signed copies from the author and cook herself.
