Merry Howdy with Stuffed Medjool Dates

13 December 2007 by Jean Johnson

I hope you have enjoyed some baked pears or at least are planning to. Dates are another way to have your sweets without letting the Sugar Fairy captivate you. My mother stuffed those big medjool dates with cream cheese and pecans. So do I, skipping her last step of rolling them in powdered sugar, but like she did, whipping the room temperature cream cheese with vanilla and a little milk before trying to work with it.The trick in doing the dates is to be tidy and not get cheese everywhere. That the gorgeous dates which come into the stores this time of year have smooth skins you can wipe off helps. Then again, perhaps you’re like my mother and not sloppy.

Whatever the case, when your sweet tooth asserts itself, a stuffed date will make you think you died and went to heaven.

P.S. In all truth, given my shortage of time this year I didn’t fool with the cream cheese. Rather room temperature blue and brie worked great. No fuss, no muss. And tres delicious.
