Lunch to Go
The best thing about this lunch to go is that it tasted as delicious as it looks. Simple food. It really is fabulous and fast–and so very kind to our health and wealth.
Recipe Note
Layer greens and leftover quinoa or other whole grain into your lunch box. Then tuck in your veggies: a last garden tomato, boiled beets, leftover wedges of winter squash. Over the top goes oil and vinegar, salt and pepper, plus some nice cheese like an artisan blue and some soy nuts for some crunch.

Sherry, I hear that more than you’d imagine. My response? It’s easy enough to make these vegs for oneself as an extension of the meat and potatoes meal. That way you get to treat yourself well even as you respect what others at your table prefer. And who knows, when the issue’s not forces, people sometimes get curious and want a taste…
