Winter Squash 101

No inclination for a photo here since we are well ahead of the winter squash curve. Still I’ve heard from two folks recently that prompted this post.

1) Winter squashes are any hardshell varieties, spaghetti squash included. You do not have to refrigerate this critters as they are good keepers–as in months in the basement or relatively cool place that does not freeze.

2) Since winter squashes are good keepers there’s no need to fiddle with them now. No need to bake them, puree the flesh, and then freeze it. Nope. Just keep the squashes in their birthday suits and enjoy their beauty until that cool autumn or winter day comes when you decide to turn them into all manner of first rate dishes: pie, soup, breads, roasted chunks, holders for cranberry sauce, warm salads, and beyond.
